Couple of Chefs Catering & Food Truck and Craft3 Ink Deal to Open New Downtown Eatery

Financed by nonprofit lender Craft3, gourmet brunch restaurant comes from the owners of Spokane’s “2016 Best Food Truck”

Nonprofit lender Craft3 and Couple of Chefs Catering & Food Truck have inked a deal to open a brick-and-mortar edition of the popular food truck in Spokane. In 2011, Couple of Chefs started as a catering business and expanded to include a food truck in 2012. With a loan from Craft3, a regional nonprofit lender with an office in Spokane, owners Allen Skelton and Joile Forral will continue expansion by opening Bruncheonette, a casual-dining gourmet brunch restaurant to be located on West Broadway.

Bruncheonette will help us grow our catering business – and also create jobs in Spokane,” said Joile Forral, co-owner of Couple of Chefs Catering & Food Truck. “Without the financial support from Craft3 and SBA, Allen and I couldn’t have purchased the restaurant equipment or made the improvements necessary to open our restaurant. We’re thrilled to be opening a physical home for Couple of Chefs – and we can’t wait to welcome in our neighbors.”

The menu – based on the style of Couple of Chefs Food Truck, which was voted by readers of The Inlander as the best food truck of 2016 – will continue to focus on utilizing quality ingredients and made-from-scratch components as much as possible. Food is an important aspect of Skelton and Forral’s everyday lives that they continually want to share with Spokane. Top notch, gourmet, fresh and flavorful food is a priority, regardless if they are serving from the food truck or from the restaurant.

Since Bruncheonette will be a full sit-down establishment, Couple of Chefs will offer a much larger menu that will include a small selection of liquor, locally crafted beer, wine, and cider. The new physical location will also allow Couple of Chefs to expand their catering and further establish their gourmet food truck presence.

“Allen and Joile have impressed us with their enthusiasm and demonstrated ability to grow in a difficult industry,” said Susan Doll, Spokane-based Craft3 Business Lender. “This Craft3 investment will help Couple of Chefs move into the next phase of their vision with Bruncheonette – a community gathering place with great food in a historic neighborhood.”

Craft3’s loan to Couple of Chefs was made possible with financial support from Goldman Sachs 10,000 Small Businesses program and a loan guarantee from the U.S. Small Business Administration.

Couple of Chefs hopes to begin serving brunch in early September 2016.
